SYNTHROPIC

On 25 hectares, we cultivate a diverse polyculture featuring olives, figs, pomegranates, almonds, and herbs, which enhances biodiversity and protects the environment. Our sustainable farming methods promote soil regeneration and the conservation of natural resources.

The First Olive Harvest

Our olives were brought directly to the oil mill every afternoon immediately after harvesting, where they were pressed using state-of-the-art machinery. The olive oil turned out excellent, and we are thrilled both with the flavor of the oil and with the analysis results we now have.

Our extra virgin olive oils are produced according to the principles of organic farming. Right after purchasing the 25-hectare property, we applied for organic certification, knowing that no chemical treatments had taken place there in the past 25 years.

The olives of organic quality are 100% self-cultivated, harvested by hand with great care, and processed immediately using the latest technology.

Top quality is guaranteed at every stage of the process. The oil not only features highly complex aromas but also boasts a remarkable polyphenol content.

Olivenernte_3

Our oil is made from a blend of two olive varieties: OGLIAREOLA and LECCINO. Their differing flavor profiles complement each other perfectly, and in our opinion, they form the ideal foundation for any demanding kitchen.

State-of-the-art mill technology: After pressing, the oil is filtered and then stored immediately in stainless steel tanks to preserve its freshness as much as possible.

Fresh and golden green. The intense color is characteristic of extra virgin olive oil, especially shortly after harvest.

Getting to know the sensory and health properties of a top-quality oil is one of the most impressive taste experiences in the kitchen.

The grassy, spicy, fresh aromas evoke spring, green meadows, the southern sun, and the warmth of Apulia.

Once you experience true premium olive oil, you’ll never want to use anything else again…

OLIO
EXTRAVERGINE
DI OLIVA

Our olive oil features a distinctly grassy and spicy aroma profile, always with a noticeable presence of bitterness and pungency, though never overpowering.

It is just as suitable for fish and meat as for legumes, tomato sauces, and vegetable dishes. In salads, it adds an interesting, bold, and fresh note.

The oil is ideal for seasoning and cooking, but can also be used for frying and grilling. It heats easily and, thanks to its high polyphenol content, even helps protect grilled foods from excessive oxidation.

  • High content of health-promoting polyphenols
  • Only own olives, processed directly on site
  • State-of-the-art milling technology by Pieralisi
  • Cultivated according to organic principles
  • 100% Italian product
  • Limited availability

APULIA: THE LAND OF OLIVES

FEW REGIONS IN ITALY ARE AS CLOSELY CONNECTED TO OLIVE CULTIVATION AS APULIA.

Almost half of all Italian olive trees grow in this region. Many are hundreds of years old, testifying to an ancient culture. Although reports of olive tree die-offs in Apulia have increased in recent years, the region is still characterized by endless forests of thriving olive trees.

THE BEAUTY AND DIVERSITY OF THIS CULTURAL LANDSCAPE SIMPLY INSPIRES.
